Limes are available all year with their peak season being in autumn. Limes are native to Asia and are the basic fruit of tropical regions where they are used for cooking, drinks and marinades and as a sharp, refreshing seasoning for seafood, meats, vegetables. They are closely related to lemons but their juice is more piercingly acidic and their rind has a different but equally intense fragrance. As with lemons, they will yield more juice if firmly rolled before using. They are harvested mature but green, when their flavour is strongest. To Store: Limes will keep in good condition at mild room temperature for a week or more. For longer storage place in fridge crisper for up to 4 weeks.
