Rocket is available year round but is best during spring and early summer. Rocket is a slightly bitter salad leaf with a nutty, peppery flavour. Cultivated rocket has a much larger broader leaf (when young, it is sold as baby rocket). Rocket is mainly used as a salad ingredient. Rocket can be used as a pizza topping, added at the last minute to a creamy potato soup, or wilted in pasta sauces. To Prepare: Wash rocket thoroughly to remove any grit before using. Dry well using a salad spinner or by blotting the leaves on paper towels. To Store: Rocket is best used on day of purchase as it wilts easily. However, it will keep in the crisper of the fridge, wrapped loosely in plastic.
