Green onions are what have commonly been known as shallots and are available year round. These onions are usually sliced and eaten raw or only lightly cooked. Perfect in stir-fries and salads. They are mild in flavour and pungency. Shallots are slender onions with green tops, slim white ends and roots attached. To Prepare: Simply discard roots, peel away outer layer and chop the whole thing. Some green top may be disguarded if preferred. If you plan to garnish food with green onions, only do so as you are about to serve the food because if they are allowed to sit on the food for an extended period of time can cause the food to go sour. To Store: Store green onions in a paper bag enclosed in a plastic bag in the fridge and use within 10 days.
