Tomatoes are available year round but are at their best in autumn. Gourmet tomatoes are the best known and most used of all the tomato types. They are thick skinned so that they can be transported without damage. They are a good all purpose tomato: their shape lends itself to slicing, dicing or cutting into wedges for salads, for stuffing and baking, or to cutting in half or quarters and roasting, grilling, pan-frying, or in sauces, stews and soups. To Store: Do not refrigerate tomatoes. They are sub-tropical in origin and chilling destroys some of their flavour. Store them at room temperature, away from sunlight and not touching each other.
