Although they are sold year round, zucchinis are at their peak during summer. Zucchinis have a soft skin and watery flesh. Zucchini simply require washing and their stem-ends trimmed, then they can be sliced, grated, chopped or halved lengthways. They cook quickly and are suited to steaming. They can be eaten raw, are the perfect side vegetable to meat. They go beautifully with spices and rich flavours. Used for ratatouille or risotto. To Store: Buy and eat zucchini quickly as they don't keep for longer than 2 days; storage will affect their delicate flavour and texture. Store in a ventilated bag in the crisper of the fridge, and don't wash them until you are ready to cook them or they may start to spoil.
