Wild blackberries are smaller than cultivated berries but are more intensely flavoured. Containing high levels of pectin, slightly under ripe blackberries are ideal for making jams, jellies and preserves. While they're great in compotes, tarts and pies, they are perhaps at their best served simply with a dollop of thick cream. To store: Place berries immediately in the refrigerator. Take out of original packaging and place in tupperware container or glass bowl. Line container with paper towels and place the blueberries in single layers between towels. Cover tightly with the lid and refrigerate.
