Leeks are available year round, however their peak season if from late spring to mid-autumn. Leeks are a mild member of the onion family. Leeks can be braised whole in chicken stock, with some herbs such as thyme - cooked some chopped leeks in butter or steam them. Do not boil leeks , as they will be soggy and tasteless. To Prepare:The part that is eaten is the thick white stem and the first, pale part of the green top. Because leeks are planted deep to keep them white, they harbour soil between the leaves and have to be washed to remove it. To Store: Chop off the dark-green tops, enclose the leeks in a paper bag, then in a plastic one, and refrigerate for up to a week.
