Cavendish bananas are the predominant variety in Australia. They account for 95% of the bananas produced in Australia. A long curved fruit with a good flavour. Deliciously sweet with a firm, creamy texture. To Store: Keep bananas in the fruit bowl to ripen. The ripening process can be speed up by enclosing bananas in a paper bag with an apple or an orange. Once ripe, you can stop them from becoming overripe by wrapping them in newspaper and storing in the fridge for up to 5 days. The skin may darken but the flesh will not be effected. Overripe or bruised bananas need not be thrown away but frozen in their skins in a freezer bag, then used for making smoothies or banana bread.
