The peak season for mangoes is from mid-spring to summer and early autumn. The beautiful mango is loved for it's paradise perfume and flavour, which have been described as a blennd of melon, peach and apricot. To Prepare: Slice the cheeks off either side of the flatish stone. The cheeks can be peeled or sliced or you can turn each check flesh side up and slice in a criss cross direction being careful not to peirce the skin then press from the underside and the flesh will open up ready for eating. To Store: Once ripe, they are very perishable so refrigerate them for up to 2 days.
