Continental, or flat leaf parsley, has flat leaves as its name suggests, and many cooks prefer it for its more pronounced flavour, as it contains more essential oils than the curly leaf parsley. A sprinkle of chopped parsley adds charm to soups and salads, vegetables, scrambled eggs, rice, potatoes and meat dishes. To store: Bunches can go into a glass of water, away from heat, overnight. If they are to be kept longer, wrap a piece of folded absorbent paper around the end of the stems, wet it, enclose loosely in a plastic bag and refrigerate.
