Jalapeno chilles are probably the most frequently seen and abundantly available chilli available at the markets today. Solid and stumpy in appearance, they are sold as both green and red varieties. Excellent for pickles, salsa, dips like guacamole, soups, salads, and stews. This is a truly versatile chilli that slots in just above average on the heat scale. They do have a thick skin, so they are far more effective used "blistered" and peeled. To Store: Store fresh chillies in a paper bag, enclosed in a plastic bag, in the fridge for up to a week or just leave them in an open bowl. They will wrinkle and shrink a bit as they get drier, and their heat will become more concentrated, but they will be fine for up to a week.
