Is available year round but is at its best in winter. Radicchio is a sturdy chicory which comes in numerous varieties, some with red and green and some with red and white leaves. Radicchio has robust, bitter leaves that can be torn or shredded for salads, or wedges can be cut for braising or barbecuing. To Prepare: Remove the tough outer leaves and discard them, then remove the inner leaves and wash them to remove dirt. Pat dry with paper towel or dry leaves in a salad spinner. Store radicchio like lettuce, in perforated plastic bags in the crisper of the fridge for up to 2 days.
