Snow peas are available year round. Snow peas have flat, edible pods enclosing tiny peas that do not mature. They are eaten whole or sliced. They can be very briefly boiled and served alone or with other vegetables such as mushrooms to accompany meats or fish or for a vegetable tart filling, used raw in salads, added raw to stir-fries, noodle dishes and spring roll fillings, added at the last minute to clear soups or used in risottos or pasta sauces. To Prepare: Snow peas need to be stringed; pinch off the stem end and, with a thumb nail, pull down the string on both sides. To Store: Enclose peas in a paper bag enclosed in a plastic bag in your fridge.Snow peas can be stored in the fridge for a few days.
