Fresh rosemary is available from the markets year round. Rosemary is a woody, evergreen Mediterranean herb with strong, resinous fragrance and flavour. Its traditional partner is lamb: a branch can be used to brush chops as they are grilling or sprigs can be tucked into slits in roast lamb. It also goes well with pork and pairs with tomato for pasta sauces and with eggplant as well as baked and fried potatoes. To Store: Store fresh rosemary in a plastic bag or in a glass of water in the fridge, covered loosely in a plastic bag.
